Tokyo jazz-kissa energy in London: rooms built around a sound system, not a playlist off someone's phone. Vinyl on the decks, speakers you can see, food and drinks that do not fight the record. Some are tiny (one table, sandos, hush). Some run later and get danceable. The through-line is that you are meant to hear the room.

This is not a generic "nice cocktail bar" list, and it is not live jazz that becomes a club. If the system is decoration, it is out.
